Oyster Mushroom Fritters. Take 100g plain flour, 3tbsps vegetable oil, 150ml warm water, 1 egg white, pinch salt, 300g freshly picked, young oyster mushrooms. Sieve flour and salt, stir in oil. Gradually add water, stirring until thickly creamy. Stand in cool place for 2 hours, add little water to thin. Beat egg white stiff, fold into batter. Heat oil in deep frying pan to 425°F/220°C. Dip washed, dried mushrooms in batter so coated either side, put in hot fat. When underside is golden brown and puffed, turn, cook other side. Drain on paper towels. Sprinkle with salt.
